Fermentation Science

​​​​​​​​​The Certificate in Fermentation Science program at Central Michigan University is a 16 credit program designed to be completed in one year.  The program is open to both deg​ree seeking and non-degree seeking students who have been accepted to Central Michigan University.  Two local businesses, Mountain Town Brewing Co. and Hunter's Ale House, are key partners in the proposed fermentation science program.


Fermentation Sciences Fall Semester

     SCI 320:Fundamentals of Fermentation Science

    • A lecture course covering the biology, chemistry, and biochemistry throughout the brewing process.

     SCI 321:Analyses of Fermentation

    • A lab course performing analytical techniques used in the brewery and analytic laboratories.

Fermentation Sciences Spring Semester

     SCI 322:Applied Fermentation Science

    • Beer design, style guidelines, and hands-on brewing

     SCI 323:Brewery Facilities and Operations

    • A lecture course covering brewery design, equipment usage, and general engineering in the brewery.

Fermentation Sciences Summer Semester

     SCI 420:Internship in Fermentation Science

    • A required minimum of 2​00 hour internship in a brewery or related business.
